Hi Guys!
Happy Monday! Even though there is a storm a brewin’ I am happy because I got to work from home today! CJ also got the day off, so we are having a little Monday Funday over here. Even though I have to do work, it’s still nice to get to spend the day with my main man. I’ve always wanted to work from home, and let me tell ya, I am living it up over here. I didn’t change out of my pajamas til 3 pm!
Since CJ worked yesterday, we didn’t get to do our usually Sunday routine (sleeping in then making a huge breakfast and watching Breaking Bad), so we did it today instead. I had never baked with fresh cranberries before, and I have a huge bag from the CSA, so I wanted to make some muffins to compliment our breakfast.![]()

I used a box of Jiffy corn Muffin Mix, and added a few fresh cranberries to each muffin. I don’t usually like to use box mixes (unless I’m making pumpkin brownies), but they are handy when you don’t feel like looking up a recipe and measuring all the ingredients.
To go along with our cranberry corn muffins, I made baked grapefruit, while CJ made fried eggs, sweet potato hash and toast. You know how much I love huge breakfasts!
I saw baked grapefruit somewhere a while ago and I have been dying to make it. I found a simple recipe online that said you could use either maple syrup or honey. We happened to have a bottle of each from the CSA so I made one with honey and one with maple syrup.
After topping with honey or maple syrup, sprinkle with cinnamon, and then bake at 375 for 15-20 minutes.
After baking, they were still a little too tart for our tastes so we sprinkled a little bit of brown sugar on top. They went great with the rest of our breakfast:

Monday: Off
Tuesday: 30 min Hatha Yoga on youtube
Wednesday: 1 hour PiYo class with mom
Thursday: Off
Friday: 15 min Yoga + 5 min Skinny Minnie midsection workout from Sarah Fit
Saturday: Body Pump (1 hour) + 75 min Heated Vinyasa Yoga
Sunday: Off
I wanted to do a little yoga yesterday but my legs were a little sore still from my double workout on Saturday, I love rest days, they are good for the body and mind! I got in a solid hour today at home since I figured my gym probably wouldn’t have it’s usually class due to the storm.
I’m off to enjoy the rest of the night! Stay Safe if you are near Hurricane Sandy!

I love working from home! You can often find me at my desk with pj pants on. I’ve even been known to be on Skype with my boss with a nice shirt and pj pants and slippers on

Oh my gosh, I NEED to try that baked grapefruit! I have one sitting in my fruit basket that needs to be eaten up. YUM!
